6 cups boiling water, divided
3 tbsp Vegetable Broth Mix
1 tsp ground turmeric
1⁄2” knob fresh ginger, well-scrubbed
2 cups uncooked broad egg noodles
4 cups frozen mixed vegetables
1 cup frozen shelled edamame beans
Garlic & Onion or Smoky Roasted Tomato Nutritional Yeast Topper, to taste
- In Multipurpose Steamer or Round Steamer stir together 4 cups boiling water, broth mix, turmeric, and aioli mix. Finely grate in unpeeled ginger.
- Add egg noodles. Microwave on high, uncovered, 6 min. Remove from microwave and stir; cook for 3 more min. Stir in vegetables, edamame and remaining 2 cups boiling water. Microwave until pasta is cooked and veggies are warmed through, about 4 min.
- Taste and season with salt and pepper, if desired. Spoon into bowls and generously shake on topper, to taste.
